How to make Mastellen
Knead all ingredients to make a uniform dough. Let it rise twice for 10 min
Divide it into pieces that weigh 1400 grams and round it up. Let it rest for 5min.
Then make those portions round. Put on plate and let it rise. Halfway through the rising process, press the middle with a cloth filled with flour.
Let it rise further. Spread egg over the dough. Bake in a preheated oven for 250 °C for 8 minutes.
