How to make Spandauer Crowns
Let a Danish Pastry Sheet defrost for 10min.
Divide the short side in 4 and divide the long side in 6. This way, you obtain 24 Spandauers.
Smooth the sides with egg yolk, fold the corners to the middle and press.
Put the Spandauers on baking sheets and let them rise for 1 hour at 32°C
Spread egg over the Spandauers and spray some frangipane in the middle. Put on top of the frangipane a little bit of raspberry jam.
Finally, bake them for about 15 minutes in a preheated oven at 220 °C.
Finish the spandauers, depending on your inspiration, with powdered sugar or GOLD CUP® Apricogel, fondant and / or sliced almonds.
