How to make Vanilla ice cream

To create the ice cream, whisk the eggs with the sugar until the sugar is dissolved. Boil the milk and add to the eggs. Bring to 82°C and let it cool down overnight in the fridge. Churn the ice cream in an ice cream machine.

For the caramel, first boil the cream. Heat sugar and glucose to a caramel and pour the hot cream on the caramel. Let it simmer for 3 minutes to ticken the caramel. Add the butter and let the caramel cool down.

Make chocolate chip cookies by mixing the butter with the brown sugar until soft. Add the eggs, sifted flour and baking powder. Finish with chocolate chips. Pour the dough on a baking plate and bake for 10 minutes at 180°C. Once cooled down, crush the cookie and add to the churned ice cream with the caramel.
