How to make TUNA DELICACY

Cut the mini baguettes lengthwise, then put them in the oven on the grill or in the salamander to toast them. Collect the lemon peel.Mix the avocado with the lemon juice, olive oil, salt and pepper.

Cut the Granny Smith apple into small dice and add it to the avocado pulp.Add the lemon zest and chopped dill.

Slice the tuna in a tartare way. Season with salt, pepper, olive oil and Espelette chilli.

Presentation: Spread the avocado pulp on the toasted mini baguette, then add the tuna tartar. Arrange some apple sticks, lemon zest and dill sprigs and a few fried onions.
