Whole-wheat baguette with humus, spinach, marinated cucumber strings and slices of avocado, finished with dill, pink pepper and chilli
How to make Greens & grains: veggie!
Cut the cucumber into thin strips and let them marinate in a mixture of olive oil, dash of lemon, tarragon vinegar, pepper and salt (about 30 min.).
Briefly simmer the spinach.
Flash-bake the baguette under the grill for 2 min. Cut open.
Spread a thick layer of humus on the bottom part.
Top with the spinach, marinated cucumber strings and slices of avocado.
Finish with dill, pink pepper and some chilli.
