How to make Chantilly
Let the milk and sugar cook together. Cut the GOLD CUP® Saveur Gourmande Chanty and GOLD CUP® Saveur Gourmande Special in pieces and add it to the milk and sugar. Set the composition on a low heat until it returns to 80°C.
Remove from the heat. Beat the egg yolks in a bit cold milk and add to the hot milk. Then mix with a large device for 7 minutes. Depending on the quantity, increase the time to 10 minutes
Immediately after mixing, let as soon as possible the mixture cool down, preferably to less than 5°C in the fridge or in the freezer. Finally, let it ripen in the fridge for 24 hours.
